People often ask what actually goes into catering a wedding or large event for us — so here’s an honest look behind the curtain.

Prep for a big event doesn’t start the morning of — it starts days before. Menus are finalised and quantities calculated carefully, because running short is never an option and waste isn’t either. Proteins are marinated in advance, spice blends are prepped fresh, and soups that need long, slow cooking are started early enough to develop properly, never rushed to fit a deadline.

The morning of the event itself is where it gets intense. Multiple dishes are often cooking simultaneously, timed precisely so everything is fresh, hot and ready together rather than sitting and losing quality. Packing is its own discipline — food is sealed, labelled and organised so that transport and setup run smoothly, with zero guesswork on-site.

Then there’s the logistics: loading, transport, setup, and — for on-site service — staff ready to serve, replenish and keep everything looking as good three hours in as it did at the start.

It’s a lot of moving parts, all working toward one outcome: your guests get food that tastes like it was made with the same care as a home-cooked family meal, at any scale.
